Max Cancelling is not always for comboing, sometimes people use it to scare people into blocking before unleashing an overhead or throw. You have to be fast, and if you are new to the game, I would focus on that last.

If you can get access to practice mode, simply start with C, BC. Then work your way up from there, adding in another C etc. It's harder than it looks, especially in the heat of battle!
